A Baked Plantain Twist on the Banana Split Classic
This past weekend was absolutely beautiful, the birds were chirping, the sun was shining, and the breeze reminded me of walking on the beach…
If you’ve been following me thus far, I’m sure you’ll get the hint that the weather tends to inspire my food cravings and new creations. Sooo naturally, I had to have the perfect beachy, weather snack – ice cream.
But of course, just plain old ice cream would not do… and we did have some veryyy ripe plantains laying around so of course that would be the PERFECT combo to my ice cream. 😋
So without any further adieu… here’s the recipe:
Very ripe plantains (let me stress veryyyy ripe, the more ripe, the more flavorful)
Preheat the oven to 350 degrees F (177 degrees C).
Slice your plantains into finger sized strips and place on a baking sheet.
Bake for 20-30 minutes or until they’re crisp on the outside.
Pair with your favorite ice cream, or eat as is!
Add your own home grown mint as a garnish – it’s super easy to grow and the perfect, extra garnish to make your dish fabulous!
