Mocha Chocolate Crackers
These crackers are the perfect pair to your morning tea or coffee. They have the perfect blend of a coffee and cocoa flavor. The coffee is not too overpowering and pairs perfectly with your choice of jam (I highly suggest a marmalade)! The best part is they’re healthy AND easy to make!
3/4 cup of all purpose flour
1/4 cup of unsweetened, high quality cocoa powder
1/4 teaspoon of salt
3 tablespoons of pure maple syrup
1 tablespoon of vegetable oil
2 1/2 tablespoons of water (room temperature)
1 teaspoon of vanilla
1 teaspoon of instant coffee (any coffee of your liking works!)
Preheat the oven to 350 degrees F (177 degrees C).
In a small bowl mix together the vanilla extract and instant coffee until the coffee is dissolved. Leave aside for later.
In a medium sized bowl, sift the flour, cocoa powder, and salt. Mix them together until they are fully incorporated.
Add the vanilla and coffee mixture, maple syrup, water, and oil. Mix with a whisk until all the ingredients are fully incorporated into a dough ball.
Transfer the dough to a well floured surface and roll it out until it’s 1/16 of an inch thick.
Cut it into small squares or rectangles and prick each cracker with a fork (so the crackers don’t expand while baking).
Bake for 20 minutes and let cool before serving.
Add your favorite jam or just have them as is. Enjoy!!
