Chocolate-Chip, Cranberry, Banana Muffins
Have you ever tried a banana muffin, but it didn’t have enough zing in it? This new creation of mine, with the addition of cinnamon, cocoa and cranberries, add the perfect amount of “tartness” to that warm and homey banana base! And the best part is they are so easy to make and perfect to eat anytime!
1 large, ripe banana
1 large egg white
1/4 cup of granulated sugar
1 tablespoon and 2 teaspoons of vegetable oil
1/2 cup of all purpose flour
1/2 teaspoon of baking powder
1/2 teaspoon of cocoa powder (high quality)
1/8 teaspoon of salt
1/8 teaspoon of cinnamon
1/2 cup of chocolate chips
1/2 cup of dried cranberries
Preheat the oven to 350 degrees F (177 degrees C).
Line or grease 4 of the muffin cups in a muffin pan.
In a bowl completely mash the banana with a fork. Then add the sugar, egg white, and oil. Whisk the whole mixture until everything is fully combined.
Add the flour, baking powder, cocoa powder, cinnamon, salt, chocolate chips, and cranberries.
Make sure everything is fully combined before dividing evenly between the four muffin cups.
Bake for 20 minutes, until golden brown.
Pro-tip: Feel free to add any other types of dried fruit that will give the banana a tart contrast. And to add more texture add toasted almonds or walnuts!
