Decadent, Gooey, Fruit and Chocolate Brownie
I can’t express how obsessed I am with this new creation of mine! It’s the perfect personal sized brownie that melts in your mouth and hugs your insides. The tart fruits and gooey chocolatey center is absolutely divine. And the best part is it’s so easy to make and looks so beautiful! I hope you enjoy these as much as I do!
1 large egg yolk
1 tablespoon whole milk
2 teaspoons vegetable oil
1/4 teaspoon vanilla extract
2 tablespoons brown sugar (lightly packed)
2 tablespoons cocoa powder (use high quality)
1 tablespoon all-purpose flour
1/8 teaspoon salt
1/4 teaspoon baking powder
2 oz. of semi-sweet Ghirardelli chocolate chunks
A handful of frozen mixed berries
Pro-tip: The quality of your chocolate chunks and cocoa powder make all the difference in this bake. If you want more of a citrus twist or tart addition to your chocolatey brownie, feel free to add fruits that will compliment those flavors!
Preheat the oven to 350 degrees Fahrenheit (177 degrees Celsius).
Lightly grease two small baking ramekins.
In a small bowl whisk the egg yolk before adding the other ingredients.
Add in the wet ingredients and sugar (milk, oil, vanilla extract, and brown sugar). Whisk and combine well.
Add the remaining dry ingredients (cocoa powder, salt, baking powder, flour, chocolate chunks, and frozen fruits.
Whisk well and evenly distribute the chocolate and fruits.
Divide the mixture evenly and pour into the ramekins.
Bake for 20 minutes (this will give you a gooey center). If you want a chewier brownie bake for a few minutes longer.
Plating Tip: Turn upside down and cover in confectioners sugar to top off the look! Enjoy!
