These are perfect for your lazy weekend mornings when you don’t want to put that much effort into your breakfast, but you still end up with a refined and classy meal! These unique flavors were inspired by my travels to Greece!
- Aunt Jemima’s Pancake Mix
- A splash of water
- Fig jam
- Cranberry goat cheese
The theory behind this meal, is that a smaller, more refined stack of pancakes will allow you to focus on the flavors so that you can savor every bite. This tiny stack of pancakes packs a huge flavor punch!
-Oil your pan and place on medium-high heat for 5 minutes
-In a liquid measuring cup combine your pancake mix and water, stir well until there are no clumps of mixture
-Pour out your pancakes into “mini disks”
-Fry until golden brown on both sides and lay out with the rest of your spreads
-On one layer spread your goat cheese, then stack it with another pancake and cover the new layer with fig jam
-Alternate until you have exhausted all layers
This mini stack has a wonderful spice kick, which is paired so well with the fruit and cheese combination! I hope you love these as much as I do!
