Honey Gingersnap Cookies
After the polar vortex in the north east – I needed a cookie that would warm my insides and help me fight off any colds! Inspired by my mom’s honey and ginger home-made cold remedy, these cookies are absolutely delicious and the perfect winter time snack!
Pro – tip: A must have for this recipe is the freshly grated ginger! It gives you that perfect kick and natural warmth when biting into this delicious cookie!
- 6 teaspoons of freshly, grated, ginger
- 1/4 cup of honey
- 3/4 cup butter (at room temperature)
- 1 cup granulated sugar
- 1 egg
- 1/2 teaspoon of salt
- 1 teaspoon of ground cinnamon
- 2 cups of all purpose flour
Pro-tip: Another key component to this recipe is the softened butter. Make sure it’s exactly at room temperature – nothing more, nothing less. This will help the ingredients fully combine and help your cookie maintain its shape!
-Preheat the oven to 350 degrees Fahrenheit (177 degrees Celsius)
-Line a baking sheet with parchment paper in preparation for your cookies
-In a large mixing bowl, beat the butter, sugar, and egg until the butter mixture is smooth (not grainy)
-Grate 6 teaspoons of fresh ginger
-To your large mixing bowl of butter and sugar, add the ginger, honey, and cinnamon
-Fully mix the ingredients until all are incorporated
-Gradually add the flour until a soft dough forms
-On your baking sheet, place “disks” of dough for baking – make sure they are spaced out 2 inches apart!
-Bake for 14 minutes, let cool for 5 minutes
