Feta-Pesto Loaf

Feta-Pesto Loaf

This delicious, artisanal loaf is airy, light, and sharp! Try it with honey or jam for the perfect balance of sweet and savory!

2 cups all purpose flour 
2 teaspoon of baking powder 
1/2 teaspoon of salt
1/4 cup olive oil
1 cup milk  
2 eggs 
180 grams of feta
2 tablespoons of fresh chopped oregano 
3 tablespoons of pesto
Salt and pepper (to season) 

Preheat the oven to 410 degrees Fahrenheit (210 degrees Celsius)
Pro-tip: Combine the flour and baking powder in a large mixing bowl to create your own self rising flour!
Add the salt, oregano, feta, and pesto to the dry mix.

In a smaller bowl, combine the remaining wet ingredients (the milk, eggs, olive oil).
Mix the wet ingredients well before adding it to the dry ingredient mixture. Season the wet ingredients with salt and pepper before adding it to the dry ingredients.
Combine the wet mixture with the dry ingredients and mix well, evenly incorporating all components.
Prepare the bread-loaf pan by covering it in parchment paper before pouring the mixture to bake.
Make sure the mixture is evenly distributed for an even bake before placing it in the oven.
Bake for 40-50 minutes.

Drizzle with honey for a delicious contrast to the feta and pesto!
